One of these days I am going to have to deal with the issue of some other kid having a birthday cake. I have read that some of you make cupcakes and freeze them. Help! I am clueless. I plan to order the chocolate cake mix from Miss Robens since it seems many of you agree it is good. Here are my questions: 1. What about frosting? Do you make the frosting yourself, buy from the regular grocery store or buy from the HFS? I have not looked at the ingredients so I don't know if there are any store bought ones that are safe. 2. What about sprinkles and other decorations? Are they GFCF? 3. Do cupcakes work better using papers or straight in the muffin tin. If in the muffin tin, do you grease or flour it? With what oil and/or flour? 4. Do you put the frosting and decorations on before or after freezing? 5. Do you first freeze them on a tray then later put them in a baggie? How do I store them best? 6. What is the best way to thaw them out? How long does it take? 7. How long do they last in the freezer before getting freezer burn? I feel like I need a degree in cooking to do anything right on this diet. I think someone should come out with a cookbook " GFCF Cooking for Dummies " .
