Guest guest Posted November 8, 2001 Report Share Posted November 8, 2001 Ok my son's bday is coming up this Wed. and I ordered the Xylitol to bake him cupcakes/cake. I want to modify recipe for choc. cake on page 190. This recipes calls for gf flour unsweetned cocoa xanthan gum baking soda baking powder eggs sugar vanilla mayonnaise water I plan to use energ egg substitute and xylitol instead of sugar. I have gf/corn free baking powder and gf vanilla. The mayo is where I run into a problem. Thus far I haven't found a soy, corn, egg, sugar free mayo. It calls for 1 cups of mayo. I was thinking subbing 1/2 cup of coconut butter and 1/2 cup safflower oil? Any comments? This is really an area of experimentation for me. Also for frosting, it says cf marg., confectioner's sugar, unsweetened cocoa, and milk substitute. What is in confectioner's sugar? Can I add something to the xylitol to make it serve as confectioner's sugar? Thanks so much. I really want to hang in there til the 6mos is up for us to get IGG tested again.
