Joan's Bread Recipe

3 1/2 cups almond flour

3 eggs

1/4 cup melted butter

1 tsp. baking soda

1 cup yogurt

1/4 tsp. salt

Usual directions - mix together in food processor, bake at 350 F (180 C) for

about 45

minutes. youll have to test to see when its done. i let it cool for quite a long

time before

removing from pan so it doesnt flop.

Oh, that was the one that I found on scdrecipe.com. It's called skillet pita

bread.

1 egg

1 tsp. baking soda

1/3 cup yogurt

1 1/2 tsp. oil(I usually use olive)

1 cup nut flour

Light beat egg. Add baking soda and yogurt, and mix. Let stand a few minutes

while baking soda foams. Add oil and nut flour. Drop 2 heaping Tbsp. per pita

in hot skillet or griddle. Cook until done on each side just like pancakes.

I think this would be good with a more bland oil like saflower, and add cinamon

or other " cookie " spices with some honey. I haven't tried that yet, but it

would make them more pancakey instead of more pitay. Glad your son loved them.

Thanks Carol for the recipe. There was another one though that you make just

like pancakes, but use as pital bread. My son LOVED them.

As I said we are really new and this cooking is really overwhelming me but I

really want to do this well. Jordan loves bread and is missing it with his

meals. I just made the easy bread (pita) but mine look like pancakes. Is that

how they are to be? I really need help with some simple basic meal plans for

my kids 2 of which like very simple foods. Jordan and I need the SCD but as a

family we are all doing it. Any help for a newbie is greatly appreciated we

do love to eat healthy and I feel I am not feeding him enough. Its hard to

fill a belly of a 10yr old growing boy. Thanks, Marissa

Yes, the pita brad looks like pancakes, so I'm sure you're doing just fine with

that. Another recipe that is simple, and we enjoy a lot is the zucchini boat

recipe from BTVC. I think it is also found on scdrecipe.com. We don't scoop

out the zucchini, mix up the filling, and refill the zucchini shell though. We

use the recipe, but just peal and finely chop the zucchini instead. Then, we

prepare the filling, and place it in a casserole dish for baking. I would

highly recommend the scdrecipe.com site. It really has some good recipes, and

many have been added in the past month or two. What about a homemade vegetable

soup using beef stock, tomato juice, green beans, carrots, and peas...something

like that. I don't have any recipe to give you for that, but I was thinking

about that today. I think I'm going to try it over the weekend.

Beat up an egg and add a couple of tablespoons of almond flour and a pinch of

baking

soda. Fry in skillet in butter or oil and turn. Renove and allow it to cool and

use as pita or

make an SCD pizza crust from BTVC or bake round slices of Provolone cheese on

parchment until they start to bubble . They will dry stiff and crisp but you may

be able to

use them as a wrap.
