I would think it would work with the raspberries, cooking them until thick with some honey to taste. It should be like jam, not jelly. Also if you want something more like a pudding topping try this lemon filling (it takes eggs): http://www.scdrecipe.com/recipes/r_007_00165.php I have wondered how the lemon filling would be if you substitute another fruit juice, such as raspberry or blueberry. I'm wondering if I heated honey to the right temp., then maybe I could whip it up with some whipped eggs whites...Does anyone know if this might work? Guest guest Posted January 31, 2007 Report Share Posted January 31, 2007 Here's our favorite: Sevemn Minute Frosting 3 egg whites 2/3 cup honey 1 tsp vanilla Place egg whites and honey in top of double boiler over hot, but not boiling, water. Beat with a rotary beater, or an electric beater at low speed while water comes to a boil. Increase speed to high speed, and continue to beat for 7 minutes, or until mixture forms soft peaks. Remove from heat, add vanilla slowly, and continue beating until frosting is stiff enough to hold its shape. I make my frosting using the same ingredients, plus a stick of softened butter. It comes out really well, and would definitely be " good enough " to serve to kids at a birthday party.
