I would think it would work with the raspberries, cooking them until

thick with some honey to taste. It should be like jam, not jelly.

Also if you want something more like a pudding topping try this lemon

filling (it takes eggs):

I have wondered how the lemon filling would be if you substitute

another fruit juice, such as raspberry or blueberry. It sounds good

to me.

Cathy,

Your best bet is to cook it until it is very thick with some honey to taste.

Dear list,

I need a topping for a birthday cake.

How well will jam turn out if you are using strained deseeded

raspberries?

Will it stick to my cake...I was hoping for a sticky topping, not one

that is like jelly.

Has anyone ever tried using honey and egg whites before to make a

topping. I'm wondering if I heated honey to the right temp., then

maybe I could whip it up with some whipped eggs whites...Does anyone

know if this might work?

Any nut-free/dairy-free Ideas?

thanks for your input,

Cathy

I used something that is advanced as it is combining nut butter, honey and

dripped

yogurt.

Here's our favorite:

Sevemn Minute Frosting

3 egg whites

2/3 cup honey

1 tsp vanilla

Place egg whites and honey in top of double boiler over hot, but not

boiling, water. Beat with a rotary beater, or an electric beater at

low speed while water comes to a boil. Increase speed to high speed,

and continue to beat for 7 minutes, or until mixture forms soft peaks.

Remove from heat, add vanilla slowly, and continue beating until

frosting is stiff enough to hold its shape. (about 3 minutes longer)

Yield: 3 cups (enough to frost a 2 layer cake)

it for my son since he is dairy free. It comes out kind of like

marshmallow fluff.

I think the Seven Minute Frosting sounds great. I make my frosting using the

same ingredients, plus a stick of softened butter. It comes out really well,

and would definitely be " good enough " to serve to kids at a birthday party.

Good luck, and happy birthday to your son!
