1 cup of whole walnuts has 785 calories and so does 1 cup ground.

Due to their high polyunsaturated fat content, walnuts are extremely perishable

and care

should be taken in their storage. Shelled walnuts should be stored in an

airtight container

and placed in the refrigerator, where they will keep for six months, or the

freezer, where

they will last for one year. Unshelled walnuts should preferably be stored in

the

refrigerator, although as long as you keep them in a cool, dry, dark place they

will stay

fresh for up to six months.

sharon, for pecans, 2C whole pecans = 1C ground. pecans and walnuts

are about the same size so i'd expect the ratio to be pretty close.

Thanks Silva, that makes sense. The 1:1 ratio sounded odd, as whole

walnuts have all those crevices, and there certainly is a fair amount

of 'air space' in a cup full of them.

I'll give the 2:1 a try, and see what happens. My cookies have come

out great when grinding them myself. I hope I don't mess it up ...

nut flours are expensive!!!
