I checked out the field site. Is it legal to get the field

Premium Cooked Country Ham or do you need to do the cooking yourself?

Ham can be cured two ways:

(1) the old fashioned way with salt and

(2) the new fangled way with sugar (dextrose, corn syrup, blah, blah, blah.)

Any sugar which has been extracted from its natural source should not be

used (nothing is 100% as we do have to make a few concessions here and

there).

So ham NOT CURED THE FIRST WAY is out!!!

Or to put it the other way: HAM CURED WITH SUGAR IS OUT.

Legal ham is Prosciutto.

'Prosciutto di Parma' from Beretta that is just made of pork and salt.

Country Ham is also called a Virginia, Tennessee, or Kentucky ham; the

best-known version is the field ham from Virginia. It is dry-cured, smoked,

and aged during a period that can range from a few months to more than a year.

Because it is so heavily salted, it requires a long soaking and simmering

process before baking. Even so, the meat retains much of its powerfully salty

flavor, and is something of an acquired taste. Unless you live in the South,

this type of ham is not available in supermarkets and must be mail-ordered.
