Guest guest Posted April 9, 2007 Report Share Posted April 9, 2007 My boys turned three years old two weeks ago and I wanted them to be able to have a cake to celebrate their birthday as well. I ended up making almond flour muffins from the recipe in Breaking the Vicious Cycle book. For the frosting, I made goat yogurt and then dripped it through two paper coffee filters in a Donvier Yogurt Cheese maker for two days. The goat yogurt came out the most beautiful creamy texture. I mixed about a teaspoon of cinnamon and on the day of my boys birthday, I spread it on their muffins and put number three candles on each one's muffin. They loved it! You could probably make the muffin recipe into a cake by baking it in loaf pan instead of a muffin tin. Hope this helps. But a basic mix of almond flour, eggs (if tolerated), baking soda, honey (if tolerated), cinnamon, goat butter (if tolerated) has always been pretty successful. Lately, however, I have been making two batches of almond butter brownies (almond butter, 1 egg, 1/2 cup of honey, 1/2 teaspoon of baking soda, a couple dashes of SCD vanilla and/or almond extract or flavor) and stacking them on top of each other with goat yogurt/butter icing in between and on top.
