I appreciate the help, Kim > Sorry Kim but many GFCF items such as lentil flour are not used on SCD as the starch is too hard to digest. Here is a reference to several comments on the subject on Elaine Gottschall's web site: http://ccgi.cobbler.plus.com/search.php?q=legumes I suggest you try peeling zucchini, cutting it in vertical strips with a vegetable peeler and sauteeing it in butter or oil.
