Amber, I make a really good chicken cookie.. it is based on the pumpkin cookie

recipe on BTVC.. I replace the nut flour with chicken.. cooked well and ground

up in the food processor, and use squash ( instead of pumpkin). I Substitute

avacado for egg( daughter is allergic) and palm oil shortening for the butter..

and I up the amounts of the spices some and add an addiitonal tsp of Vanilla,

and use 1 cup of honey. I have to say that I don't like the cookies, but they

look like cookies, and my daughter, age 3 LOVES them. My next thing is to

sneak some veges in there.. meal in a cookie!! haha. Anyway, you might give it

a try

Thank so much Ellen for the cookie recipe. I never thought about

cookies. The kids have been eating a lot of egg-free chicken cupcakes

lately..they need something new...

Have you ever made a cake out of chicken? I'm wondering if some egg

might hold it together(I'm thinking some palm oil or coconut oil would

probably be necessary too)I'm working on a birthday cake for my son.

Fortunately my son can have eggs, but my daughter may have to settle

for egg-free chicken cupcakes topped with jam.

How do you make the egg free chicken cupcakes? I'm trying to find some

egg free recipes because I feel like my son is eating too many eggs and

I don't want him to get sensitive to them.

Debbie,

My son is eating a ton of eggs too. I only make the cupcakes without

egg because my daughter is very allergic to eggs.

I use the chicken cupcake recipe from:

http://www.pecanbread.com/recipes.html just omit the eggs.

They are not as good as the one with eggs, but they like them.(usually

with raspberry jam on them.)

Make sure the batter is thick, I use a little less fruit,the amount of

fruit varies depending on humidity etc.(When you make them

successfully just make sure the batter looks the same every time) I

use a dark, heavy industrial muffin tin with no paper liners...I cook

them until there is a slight,dark line around the cupcakes or until

the bottom is not too wet to get them out..then I flip them over on a

piece of foil and cook them for a bit longer.--I've sometimes use

apple instead of the banana. I usually use acorn squash(they don't

like them with carrots in them) and I add a little honey.(1TB).
