Liquid smoke and sodium phosphate

I have a bottle of Liquid Smoke in my cabinet... as my husband does his own

smoked salmon. Ingredients are:

" Water, hickory smoke flavor, vinegar, hydrolyzed soy protein, sugar, color

caramel, spices. "

Obviously, it's illegal because of the sugar and the soy protein.... but even

if those weren't there, the " hickory smoke flavor " is suspect.... b/c we don't

know what that is made from. Also, whenver you see the word " spices " on a label,

you can pretty much call that product illegal.... because companies are allowed

to hide all KINDS of things under that heading, including MSG, sugars and

starches. They usually like to keep their proprietary spice blends secret....

so don't want to list what it actually is, and they don't have to as long as

it's only a certain small percentage of the total ingredients.

I am not totally sure about sodium phosphate.... I think it is probably legal,

just a salt/flavoring or a preservative. Not terribly healthy, but not illegal.

I was told by several veterans on the list that sodium phosphate is illegal. I

had asked because a lot of the big bags of flash frozen bonless, skinless

chicken breasts say in a solution of water and sodium phosphate. I asked the

list several times about the sodium phosphate, and was always told it is

illegal.

I honestly have not ever been aware of that particular chemical ingredient being

pegged specifically, as either illegal or legal. I just know that we need to

avoid the frozen meats with basting solutions, and the injected turkeys. You're

likely quite right, but I always thought it was because of the possibility of

other unlabled sugars and starches that *could* be lurking in the solution as

" seasonings " .

Here's the dictionary definition of sodium phosphate:

" Any of various sodium salts of phosphoric acid, especially NaH2PO4, Na2HPO4,

and Na3PO4, widely used in pharmaceutical manufacturing, medicine, and

chemistry. "

So.... actually it doesn't look like a sugar or a starch to me. However, I

think I'd rather avoid it, just for general health reasons. I'm more familiar

with TRI-sodium phosphate- the cleaning product TSP. That stuff will just about

peel the skin off your hands if you don't wear gloves. :)
