You just want to make sure that they are soft when you stop the cooking process. Eventually, he should be able to tolerate raw produce with pealings on, but it will be several months. I don't know if this is typical, but my son has been SCD for over 10 months, and he still needs his fruits and veggies pealed and cooked. He can occassionally tolerate raw fruit that is naturally softer like a pear, but not with the pealing on it. It is going to prevent progress if the school staff is not monitoring him closely to make sure that he doesn't steal foods, or they're just allowing him to have them. Do you have it in his IEP that he must only have the foods brought from home? This doesn't necessarily mean that they will adhere to it, but you have legal recourse if they do not. I find that this is one of the problems with the children going to school with staff that doesn't believe in the powerful work that SCD can do.
