Guest guest
Hi Sharon, << I'm about to make zucchini squash pickles for my hubby. He's still at > the stage where he needs everything peeled, seeded, and cooked. I'm > planning on peeling the squash, but not seeding them since they are > very small. If the seeds end up bothering him, then we'll seed them > before he eats them. >> Elaine said if the zucchini is small than you don't need to worry about the small immature seeds (if cooked). << My question is, do I need to cook the squash, > then pickle them, or will it be cooked enough by the canning process > or softened by the pickling? >> The pickling is not the same as cooking the squash. What you may be able to do is if he isn't able to tolerate it pickled, after the pickling you could steam it. It will be cooked but have the pickling flavour.
