I add them in place of eggs. The muffins don't hold together as well as with eggs, but I found that if I refrigerate them after baking, they do hold together just fine. Hope this helps. It hs been the best I have come up with.. and lord knows I have treid everything I could think of. I have TRIED to use just the pureed squash as an egg sub...does NOT work. Neither does the baking soda sub. I am so close to stopping this diet for my son b/c I have tried recipes a tons of times, all failed. The recipes jsut DO NOT cook without eggs. I decided last night that you just cannot bake without eggs!!!! So, I see these ideas about eggs subs, but no actual measurements for specific recipes. Can someone please post some recpies with actual amounts PLEASE? I am about to lose it!!!! Also, the " crispy crackers " recipe on pg.82 of " Cooking to HEal Little Tummies " book from Lucy's Kitchen, which does not require eggs is one I have now tried and they NEVER turn into crackers!!! They never mesh together into a cracker, even with more oil added, and with cooking even over 45min!!! Here it is: 2 cups almond flour 1/4tsp baking soda 1 tsp salt 4 T safflower oil Bake at 275 for 20-30minutes. DOES NOT WORK!!!!!! THe crackers never mess together, less oil, more oil, higher temps, longer time....NOTHING!!!! I have GOT to get working recipes for (1) Loaf Bread (the eggless alomd bread on pecanbread website is more like soft brownies) (2) Muffins (3) Crackers, and (4) Pizza Crust. I have tried non-stop for almost 2 weeks now on these things and CANNOT get them to work! Is there somewhere that I can order some of these things pre-made, WITHOUT EGGS? I don't know what else to do, unless someone has some recipes for me.... Please help. We are sooooooo close to calling it quits on this diet. Which type of squash (some are drier and some are wetter) How many eggs does 1 pureed avocado and 1/2 cup of squash equal as a substitute? Which recipes have you succesfully used this in?
