What about banana leather; is that legal? You can puree ripe bananas and then smear it on a Teflex sheet and put it in the dehydrator (takes a long time, about 24 hours, I think). Check the label and make sure it's JUST peaches. You might also try frozen mango chunks. These fruits have not been COOKED, so you have to cook them...... maybe just let them thaw, then steam for a bit. Peaches shouldn't take long to cook. Then, if they refuse cooked fruits because of the texture, you might try re-freezing the chunks or slices. I know this sounds like a lot of work, and that's about the last thing you need right now, but it might work.... just spread them out individually on a cookie sheet lined with parchment or waxed paper.... and freeze (maybe not even all the way solid). Your kids might just want a little more crunch and solid texture?? I know a number of kids who love frozen peach and mango slices.... but won't eat either one cooked and mushy. Have you done the butternut squash fries? Very popular with kids. You might have to experiment with higher baking temp, shorter time.... or the reverse.... to get them just right. I do them on a stone and I have to keep them in longer to get even close to crispy..... and then they have to be eaten right away, which is usually no problem in my household. I'm going to try them on parchment next time. Also, I have used olive oil in the past, but am going to try them with coconut oil. I can only find frozen peaches(5 little chunks) in a bag of mixed frozen fruit(mostly fruit they can't eat or don't like). It isn't worth buying for a couple bits of peaches. I've been re-freezing cooked fruit since the start ...I wished I would of frooze more this summer. I've been making various flavours of cooked fruit popsicles...I use cooked seeded raspberries, apples, pears,bananas,sometimes honey, sometimes cin...all diff. combinations. I'm not afraid of the work..!I tried to make beef jerky..it wasn't good.HA! I even attempted coconut yogurt (with a real coconut)...Off course that didn't work...what a waist of time...it looks like they are allergic to the milk anyways. I tried some fruit leather in the past...it didn't turn out too good...I probabaly should try it again. My son does like acorn squash fries(probably just because it is harder to cut it!)..but not too often. will eat them sometimes . thanks for trying to help...I'm sure I can figure something out....I can't send a popiscle for a snack at school for them..Although, I've brought them fruit popsicles before at their 11:ooam snack time ....I am sooooo uncomfortable with that...they think I'm crazy and I'm starving them because the only thing I give them is a popsicle.. I will figure something out, as I can't send anymore unripe bananas...and my son only brought juice with no snack many times as he refused to bring a snack he didn't like...then his teacher gives him raisins and of course she let me know he didn't have a snack. We had a good lunch today...spaghetti squash and meatball with sauce. I think is Ok with the sp. squash...it probably has just been the bananas...I was sending her off to school a bit hungry..and it was so easy to overlook how ripe the banana was as I knew she would eat it..and she was hungry. They are always home for lunch or I deliver lunch for 1:15 but it is so long until lunch. The School is nut-free so we will never have a cupcake at school. Maybe some fruit leather will help. The food situation is not that bad...I am just depressed and dragging this whole family into depression too. I think even my local Fred Meyer (Kroger's) has them. Hang in there, Cathy.... I know you'll hit on a winner and get past this. We all get a little burnt out once in a while. I don't think I'm going to find them in Chatham, Ontario, Canada. I'm not going to drive an hour to another city just for peaches. Too many years of special diets and food problems is depressing us all...even my hubby is depressed(not scd but celiac/many intolerances). This has nothing to do with the work of the SCD...I've been stuck in my kitchen for years, I'm used to the work. Maybe if I ate more or ate with them more often things would be better. I've totally lost my appetite and sometimes I can only eat when they are not around. I feel so bad that I have no food issues. I will snap out of this some how. Guest guest Posted January 5, 2007 Report Share Posted January 5, 2007 Dear List: When my children are acting like they are very hungry I try to get them to eat foods with really good oils. Coconut oils (stir fried butternut squash or carrots), olive oil, pecan oil. etc. You can add olive oil to tomato sauce (boiled down legal tomato juice). Coconut milk is also good for filling up, it is an advance food (it might be ok early if no fiber is in it I need to ask the list about this). You can add coconut milk to sauces or smoothies. I find jello to be a filling snack. It might also be helpful to do bone broths and add to any gravies that you do. My kids love gravy with baked butternut squash. I find dehydrated fruit very hard to digest (I've been on the diet for 2 years). My kids always complain their tummies hurt if they eat any dried fruit other than raisons, prunes or dates. I will make cookies and then dehydrate in my oven warmer for 3-6 hours on a low temp then store in tupperware. The cookies come out super crunchy like from the store. If cookies become stale, dehydrating them until they are crunchy gives them back a good flavor too. I hope this helps.
