It was just mayo(homemade, of course) and baked or boiled chicken whizzed up in the food processer. Mix together, form into nugget shapes on cookie sheet, and bake at 350 for about 25 minutes. I'm not sure about the sweet and sour sauce. Try Carol's I Can't Believe It's not Rice recipe. She posted it a while back, too. It should be in the files. Brocolli should be OK. It's SCD legal. I don't have any ideas for the fortune cookie or the eggroll though. Go on the internet and see what else that is legal usually goes in an eggroll. I don't think I would try to replicate a fortune cookie. This sounds like enough work as it is. Guest guest Posted January 7, 2007 Report Share Posted January 7, 2007 Hi Sue, I am a Singaporean chinese and I just started my 2 year old son on SCD. One of the dishes I can think of which is SCD legal would be stir fry prawns with mango. Just heat up some oil (and some butter if tolerated) and fry some chopped garlic and onion(optional), add snow pea(optional)first,sliced mango and then prawns (de-shelled). The snow pea takes longest to cooked, the mango followed by the prawns. Add salt to taste. To make it like a finger food, you can then put them on toothpicks, like a kebab. The juice from the mango does it beautifully for this dish. If raw herbs are tolerated, you could add chopped cilantro last to the dish. It is fine if you fry the chopped cilantro with the rest for a minute.
