I've found that yogurt on folded over cheesecloth (3x) over a bowl overnight works great. No thicker than 1 " on the yogurt. Stuff looks like whipped cream cheese when scraped off and put into a glass container. Oh, I use raw grassfed goat milk, and the GiPro starter. Has anyone successfully made yogurt cheese with goat yogurt and can you tell me how? I use Meyenburg goat milk because that is what I can find. I use a coffee filter to drip the yogurt. I put a coffee filter in a strainer and put the strainer over a bowl. Then I pour in the yogurt. I put in as much of the yogurt as I can and then it takes most of a day to completely drip. I keep it covered in the fridge. I imagine if I put less yogurt in, it would take a shorter time. I have much better luck dripping my yogurt now that I let it cool in a pan of ice water to room temp or below before adding the starter. When I used to follow the directions that said cool only to 108 degrees, I had a terrible time dripping my yogurt sufficiently. (I also quit the Custom Probiotic starter at the same time, so I don't know if the temperature really made that much difference.) I've made yogurt out of both that and local raw goat milk. The Meyenburg yogurt turns out more like thick milk. It works well and you can drip it to make " cream cheese " . If you want the recipe let me know. Like you told me on the phone the other night when we were discussing my order, my Vitamix might have been so powerful that it turned the almonds into a nut butter the first time I tried to make the almond yogurt. The recipe I used a few months ago called for 1-1/3 cups of almonds in a blender with enough water to make 4-5 cups, and the nuts and water were supposed to be blended for exactly 10 minutes (the recipe said to use a stopwatch). I put all of this in my Vitamix on high speed and let it run for 10 minutes, but that was probably way too much since the Vitamix will cook piping hot soup from raw broccoli, milk and cheese in just four minutes. I have dripped goat yogurt through a tea towell..... or tightly woven muslin fabric. You might even need two layers of fabric.
