I used the baking, oil, water mix for egg replacement in some cookies and that worked great too. Guest guest Posted January 24, 2007 Report Share Posted January 24, 2007 avacados and cooked squash combined have been an excellent substition for eggs for me. I just eye ball the amount. I haven't tried pancakes, but the avacado works in everything else, from meatloaf to muffins. Hope that helps. Guest guest Posted January 26, 2007 Report Share Posted January 26, 2007 Seems like awhile back someone posted that if you can't tolerate chicken eggs, you could try duck eggs. Very different protein I guess. Locating them is hard - we have the same egg intolerances and have just located a farmer who has them, but we haven't gotten any yet since I guess the ducks don't lay much in winter (I am in Michigan).
