Spread them out on an absorbant towell to cool. Once cool enough to handle, you're going to grab an almond between your fingers and just squeeze. They pop right out of their little jackets. Then, you might want to leave them out on the towell to dry thoroughly before adding any coating. I'll post a great holiday almond recipe in a minute..... really EASY and make wonderful gifts, even to non-SCDers. Patti Blanching almonds Anyone know how to blanch almonds? I need to make some spiced nuts to replace the Christmas candy and cookies. I used to make chocolate covered almonds by coating them in a sugar and spices mixture, toasting, and then dipping in chocolate. I'm going to just blanch the almonds first, coat them in a honey and spices mixture this year, and roast them in the oven. Let the almonds sit for 1 minute and no longer. Drain, rinse under cold water, and drain again. Pat dry and slip the skins off. Tips: Don't let almonds sit in hot water too long or they will lose their crispness. 1 pound of almonds in the shell will yield about 1-1/2 cups shelled. 1 pound shelled = 3 cups whole or 4 cups slivered.
