I personally don't use it much but when I do I get so frustrated cause its so messy! If what you have is a solid mass and does not fall apart when touched or handled its probably not real DCCC. Charlene <>< I ordered some pasturised DCCC from the Swiss Connection but it wasn't the dried curd. It is thick like dripped yogurt. This is a new co. that I am not used to.
