Guest guest Posted March 14, 2007 Report Share Posted March 14, 2007 Cheryl, I make my own, have done for 5 or 6 years since I became particular about what chicken I'll eat. I buy free range organic chickens which are expensive so I make sure I get extra value out of them by making chicken " stock " (same as broth I think) every week. I make it in the morning so it can be cooled, defatted and in the freezer or used for dinner the same night. My basic recipe is to pop the chicken carcass plus any big bones saved into a pot with 3 litres of water, pinch or two of sea salt, 1 large onion peeled and quartered and a couple of stalks of celery plus the leafy tops. Bring it to the boil then simmer 2 - 3 hours. I sometimes add fresh herbs from the garden or a clove of garlic. When cool I put it in a large pyrex jug in the fridge where the fat comes to the surface and solidifies. I remove as much of this as I can then use the broth in soups etc, or to cook rice by immersion method for my husband and kids who are non SCD. Sometimes my broth is jelly like (not sure if that happens when I cook it longer?). The broth has a really good flavour when that happens but I do find it harder to remove the fat. RE store bought, I'm on the other side of the world so can't help you with brands that may be legal. (I'm sure someone else can give you good advice there.) I did look at beef broth in the store recently and saw that all the ingredients looked legal except for soy.
