Guest guest Posted January 21, 2007 Report Share Posted January 21, 2007 Hi.... Our SCD yogurt is supposed to be fermented for 24 hours. I wouldn't recommend going past 30 hrs. I'm surprised that Lucy's instructions say up to 34 hours. (Anyone care to comment further on this? Charlene? Mimi?) I do think it is *probably* okay to eat.... although I really am not sure about that. I do think that much of the good flora will have probably already bitten the dust. You might want to reserve this for something that will be baked.... cheesecake, maybe? I'm sure you won't do that again! We've all done it, though! My trick is to always make my yogurt at night.... just before bedtime. Then, it's ready right before I go to bed the next night. If it's " done " at any other time of the day, I am far more likely to forget about it.... or to not be home right when the 24 hrs are up, due to some forgotten appointment or last-minute errand. I put a sticky note on my bathroom mirror that says " YOGURT!!! " .... and sometimes another one on the cabinet door just above the yogurt maker. If I'm not too bleary-eyed, I figure I will at least see the little red light still glowing on the counter top, after I turn out the kitchen light to head for bed. More than once, I've sat bolt upright in bed just as I was drifting off.... and gasped " OH, NO!! I forgot the YOGURT!! " ... and ran back down to take it out and pop it in the fridge. Patti Did I ruin the yogurt? I have the yogurt maker from Lucy's kitchen shop and it says to leave the yogurt in 24 to 34 hours. I forgot and left it in 36 hours. Guest guest Posted January 21, 2007 Report Share Posted January 21, 2007 I remember either Carol or Marilyn telling me the first time I let my yogurt go way too long that it would be OK to use it for cooking, frozen yogurt, ect...just don't plan on there being any good flora left. BTW, I forgot to put my yogurt in the frig before bed last night, so it didn't go in until this morning...probably about 36 hours. I was not happy about it at all. Meleah Did I ruin the yogurt? I was not happy about it at all. > Meleah > Meleah, Cheer up :-) It is not a tragedy to have to make a batch of ice cream from the yogurt that was incubated too long. Cooking with yogurt kills all the good guys, Freezing only some and fermenting it too long kills some but not all. No sense feeling remorse over one batch. I just made a double and it is so runny and tastes too tart, but I added honey and nut butter to it as a dessert, used some in the tomato soup and tried dripping some. Carol F.
