All this recent conversation about chocolate has had me drooling with envy!! I was never a chocoholic as a child or adult. While I've always liked the flavor of chocolate and if asked to order ice cream, that flavor would have been my choice, there was never much of an addiction to it like so many people have. Perversely, once I became diabetic, my interest and cravings for this forbidden delicacy hit me like a hammer, and I have found myself stopping and drooling over each chocolate bar, chocolate ice cream, chocolate cake, or brownie that I see! Fortunately, Breyers makes a 3 carb chocolate ice cream now that appeases me, and Carbolite makes a chocolate crunch candy bar that tastes exactly like a Nestle's Crunch bar that I've discovered. It only has 1.9 net carbs, or something like that, and is made with sugar alcohols, which I've found don't raise my BG's at all, so I've been able to indulge this new passion for chocolate. I've even successfully converted some recipes by using carbolite chocolates and substituting Splenda for sugar, so I'm going to see if I can somehow convert your recipe into something palatable that I could fix for our holiday treats. I've already found a diabetic brownie mix that I may be able to tweak enough to end up with something similar to your recipe......if I could only find a way to make sugar-free caramels!
