carol,

we're only on day 10. i am going to try making some squash fries

tomorrow (oven baked). even if it doesn't cure the anxiety, i think

my daughter will be thrilled.

we've been eating way too much meat and eggs, and i want to learn to

make some veggie-mostly dishes.

I want to make the squash fries! How do you ever cut up and peel a

butternut squash? I could not cut or peel it. Is there some trick? You

do not cook it 1st do you?

Around the three month mark of SCD there is often an unexplained regression

or

discomfort. Is it possible this is what you are experiencing? I find " Squash

Fries " and

putting lots of cheese or herbs in recipes and baked goods satisfies my carb

lust

sufficiently. Actually my own cravings seem to lean towards meat.

Peeling a butternut squash is tricky.... but here's how I do it:

First, you need a large, SHARP knife. Cut both ends off... just the stem part,

and a very small slice off the bottom end, maybe about 1/4 inch thick. Trickier,

depending on the shape of the individual squash.

Then, you need a regular veggie peeler.... but make sure it's a fairly new,

SHARP one. Spread out a terry cloth kitchen towell... one that you don't care

about getting stains on. Doing the peeling on the towell helps keep it from

slipping around. Just start peeling, starting at the edges of exposed squash,

where you've already cut the ends away.... the curved bits around both ends

will be the hardest, and you'll need to just get small bits of peel off with

each stroke. Just remember to start the peeler right at the edge where the flesh

is already exposed. The skin is actually quite thin. Then you can take bigger,

longer strokes down the sides.

Yes, that is a chore, but that's the hardest part! Once it's all peeled, again

use your large, SHARP knife and cut the squash in half lengthwise. Or,

sometimes, if the bulbous part (where the seeds are) is sort of smallish, with

the rest of the " neck " of the squash being longer and more consistantly

cylindrical in size (I try to choose them this way on purpose, because they're

just easier to work with), I will cut the bulbous part completely off first.....

THEN cut the neck in half lengthwise.

Once you have a flat side (the cut side), it's much easier to lay it flat side

down on a cutting board and cut " slabs " . For squash fries, I try to make those

slabs about 1/4 " thick.... or slightly larger (3/8 " ?). Whatever size you

decide, try to make the slices all the same. Then lay the slices down flat and

cut them into " fries " .... so that they are the same thickness both ways.

You'll have those odd curved bits from the ends to try to deal with as best you

can.... but you could save those parts to steam or cook with something else. The

fries will turn out best if the pieces are as close to the same size as possible

(thickness-wise).

Toss with oil, and bake as directed. I use a stone, others just use a

parchment-lined baking sheet and have good results.

my squash wasn't too difficult to break open. it was easy to peal.

but, it did take a long time to cut into fries.
