Guest guest Posted January 14, 2007 Report Share Posted January 14, 2007 Cathy, Acorn squash is yellower than butternut. It does not mean it is not ripe. It is certainly not as sweet as butternut. I tend to bake it upsidedown, then when it is soft and I turn it over and put butter and honey on and bake for another 5-10 minutes. Very yummy. Charlene Acorn or pepper squash...does it need to be as orange as other squashes like butternut squash to be ripe. I just cut into a acorn sqash tonight and it was pretty yellowish...I suppose it is not ripe enough? I have another acorn squash that looks the same...will it ever ripen? Mine has a yellow spot on it. And I'm thinking that the yellow inside is a little too pale..maybe almost on the white side. I have had some that have been pretty pale on the inside. They are not too expensive so I would just cook it like in BTVC and if its really bitter and not nice then we know that really pale ones are not edible. Try it with the butter and honey and just see. I've been doing some reading and it says that the skin should be a dark and dull green and an orange spot on the skin..(green-almost bronze?) I think my kids only like the acorn squash and no other squashes because I've been feeding them unripe ones...they must craving that extra starch. I think I will buy another kind of squash for now. One that I know is ripe..as I was just going to use the squash for baking...and they won't know the difference.I wonder which one would be the best one? I haven't had much luck with squash lately...they are either under-ripe or over ripe. I will cook some acorn and see if it's bitter.
