It also has antifungal properties. Some will be able to digest fats better than others. Frying foods in it, or in other oils, may render the foods more difficult to digest, as Kim has said. Coconut is an advanced food..... meaning dried, shredded coconut. For families who need a " milk like " drink or smoothie base, Elaine okayed coconut milk, as long as it's homemade, even for those who are fairly new to the diet. Wait much longer to introduce shredded coconut, as it is too fibrous. Patti Re: question again, please help! Cooked oil was something we were not successful with until about a year on the diet. No cooked oil is good and will even cause reaction now (5 years later). We keep it only for special events like birthdays, celebrations, etc. (Just because its 'legal' doesn't mean it's always okay to use.) Coconut is also a fairly advanced food.
