Which kind should I use? There is the packaged, organic unsweetened, the fresh young coconut, or the coconut with the brown husk. If I need to use the latter 2, do I simply shred the coconut in the food processor and use it fresh? Or do I need to wait until it has dried? Confused! . Both are legal. But, it depends on the recipe, which one you'll want to use. I would imagine most recipes are calling for dried coconut, unless they specifically state to use fresh.
