Carrots may be difficult for some folks. I have heard that Taliapa fish is very easy to digest. My son could not tolerate any nightshade (tomato, potato - not SCD legal anyway, eggplant, etc.) or any lily (onion, garlic, etc.). He also had issue with kiwi, etc. Nuts were limited also. We did a total elimination diet before knowing about SCD. (This means going 'backwards' for a bit to eliminate meat... and then carrots.... and then cabbage.) When I came upon the SCD book, we were already doing it but I liked the book because it explained 'why' our own special diet was working for us. I have since done a great deal of research/reading about food sensitivities and eosinophils (my son's were high even after implementation of SCD). In the five years there have been some real eye openers. One that comes to mind is a case study about a young girl who reacted to chicken and did not grow properly. Once the chicken and a few other things were removed, her growth improved a great deal. I now promote a total elimination diet because I have come to realize that anyone can react to just about anything. Please do not feel overwhelmed though, my son can now enjoy small portions of tomato and onions and garlic - though he still will not eat potato, which is quite fine with me. He even enjoys them, to the point of making his own salsa (he is 7). So there is some light at the end of the tunnel... but it's hard to heal when ingesting things that are reacting with your gut.
