Dear Elisabeth, I am celiac and have followed the Specific Carbohydrate Diet for seven years. www.breakingtheviciuscycle.info This diet goes beyond the Gluten Free Casein Free Diet as it excludes not only gluten, but also dissacharide starch which is contained in corn, rice and potatoes and cannot be directly absorbed into the bloodstream without taxing a compromised digestive system. We bake with nut flour and can use home incubated yogurt as the lactose gets consumed and also cow and goat cheeses aged more than 30 days but no ricotta or mozzarella. The diet was orginated fifty years ago by Dr. Sydney Valentine Haas and I am sure Dr. green will be familiar with it as it was pioneer celiac research Before I became celiac I had lost a lot of weight as I originally weighed 219 from years of Lithium. I lost the weight but became celiac for several reasons. being on SCD has made it easy to maintain an 86 poubd weight loss although the diet is not about weight loss. I no longer need Lithium and am emotionally stable and no longersuffer depression or bi-polar extremes. I love the show, am enjoying Rosie's tenure as host and try not to miss a day.
