Leeks, Eggplant..and digestibility??

I'm trying to expand on my vegetables. I just wanted to know if leeks

or eggplant are difficult to digest.(I've never tried them before)

All the veges they are eating now are squash, Sp. Squash,

cauliflower, Brocoli, carrots, zuchinni,tomato sauce. They are not OK

with onion or garlic.

They are in the " nightshade " family. There is no distinction made about them in

BTVCV

Leeks are in the oinion family and can be gassy. Both leeks and eggplant are

legal. ( I am

making Moussaka for dinner, using thinly sliced sauteed eggplant to layer along

with

minced lamb and DCCC with an egg beaten in to make it like Bechamel sauce)

Thanks Carol for both replies. I read your link on the " nightshades " .

I just bought some leeks...i don't think that was wise.

I think we better avoid or limit the nightshades.. for now,.as my

son does get a sore mouth(eczema) when he eats tomato sauce(just Heinz

tJ), too often. I'm sure more nightshades would be a big problem. My

daughter does handle the nightshades better...maybe she can try

something new as she never eats large amounts of one thing.

" Moussaka " that sounds good, I wish I had time to make that for

myself. I look forward to the day when I have time to try some new

recipes just for fun... it very difficult finding recipes that

everyone can eat...as all 3 of mine have different dietary

needs...sometimes I make 3 different meals for them .

I joined " Scdrecipe_creators " , I'm sure I'll find some more ideas.

Beat an egg into some DCCC and add a few drops of honey.

Brown some minced lamb. I add rosemary, minced garlic and a pinch of cinnamon,

Brown thin slices of eggplant in a skillet with a little olice oil.. If you are

a relative

beginner, peel a baby eggplant. Place the eggplant in the bottom of a greased

loaf pan.

Spread on the meat and top with the cheese mixture and bake at 375 F for 45

minutes.

I add a little SCD tomato sauce sometimes but you don't need to. Cool five

minutes before

serving.
