Guest guest Posted February 24, 2007 Report Share Posted February 24, 2007 I am making the vegetable latkes from SCD with Taste and Tradition because I was lucky enough (I thought) to find some parsley roots. They are super-giant sized compared to ones I've bought before, but they did have a twist-tie band around them with the words " parsley root " . Cuttin g up the first one, I see it is hollow in the center. I assume this means it's overgrown? Does anyone know much about parslet root? It's not moldy. It's solid on the outside. Do I use it? Some children do well with them; others do not. However, they are pretty good from a carb standpoint and Dr. Haas allowed them. - Elaine Carol F. Guest guest Posted February 24, 2007 Report Share Posted February 24, 2007 Hmmm..... if it contains " mucilage " , it sounds to me like this would end up being classified as similar to one of the mucilaginous herbs, which are not legal. But, it's confusing, because as says, parsley root is included in this recipe from the " SCD Taste and Tradition " cookbook. Apparently the author of that cookbook assumed parsley root was legal... but I see that parsley is on Elaine's legal list. Parsley ROOT isn't mentioned one way or the other.
