Guest guest Posted March 30, 2007 Report Share Posted March 30, 2007 Jen, You soak them for eight hours. Totally cover them with water, and add more as needed. Then you drain and rinse thoroughly after the eight hours. Then bring to a boil in fresh water, and either boil or simmer uncovered until cooked through. I always simmer mine, and it takes longer, but I don't have to worry about them burning. I'd start he with lentels if you can. See how that goes, and then move to the beans. Actually, the red ones are just de-hulled regular lentils.... but are much more digestible with the hulls removed. Patti Re: white navy beans... I'd start he with lentels if you can. Make sure that they are fully covered with water. I usually add a bit of water throughout the day. After 8 hours, drain and rinse in clean water. Then cover with fresh water in a pot. Bring to a boil, and then simmer until cooked through. I'd start with lentels rather than beans because they are easier to digest. As Patty pointed out, the pink or red ones have been dehulled, so they're even easier than the greyish green ones...if you can find them. The lentels are cook faster anyway.
