I agree that as long as he is eating well balanced SCDiet and truly not showing addictive behavior, by being self limiting to only eating yogurt, that I would not worry, and continue feeding him this wonderful food. SCD yogurt is full of all those good probiotics. We found that it was the yogurt that helped the most in ending some of the strange autistic behaviors in our house. More than likely thanks to helping to put the gut back into balance. I just love Elaine's chapter on Autism. She explains this so well. I have personally rationalized that since the casein in the yogurt is fermented for a minimum of 24 hours, when making SCDiet, that the casein is denatured and possibly does not cause this same opiod reaction. We do seem to have a reaction to the dry curd though. I assume that it is because the dry curd is not denatured enough during the process of making this type of cheese (even though it is lactose free and SCD legal). According to Elaine the protein is so fermented that it rarely causes " allergic reactions " in those of us with allergy. I wish she was here so I could ask her if this meant an opiod reaction, but she is not. So we are left to guessing. I do know that Elaine thought the SCD yogurt to be an important part of this diet. This is what Elaine said (you can find this under goat yogurt at www.pecanbread.com<http://www.pecanbread.com/>: The Process of Making Yogurt Changes the Casein From Elaine Gottschall: " When we make yogurt and the pH falls to about 4.5 rather than 7.1-2 (as in fluid milk), the proteins are denatured which means that because of the acidity, the proteins lose their 3 dimensional structure (sterochemistry) which would be the reason allergists worry about casein. In yogurt and in the natural cheeses, the casein is denatured into a two-dimensional structure which would be less likely to cause allergic reactions. I can see why Elaine did not care for the gluten free casein free diet. You are all fortunate to have known her.
