Kristie, You want to make sure vegetables like squash are thoroughly cooked. Preheat the oven to 375 degrees. In a large bowl, toss cut up butternut squash or beets for example, in 1 tablespoon of the olive oil, plus a little salt and pepper, until coated. Arrange the vegetables cut-side down on a large baking sheet and roast on the bottom shelf of the oven for 20 minutes or until the vegetables are beginning to brown. Turn the vegetables 2 or 3 times during cooking to prevent burning. You can also do them on parchment paper but coat or spray them with some oil if you want them crusty. > Also cooking meat: Someone suggested not to fry it. .. You can bake, broil, grill or braise meat. Frying can make it harder to digest. It depends on whether you want it crisp, juicy, soft etc. I certainly do some meat, fish or poultry dipped in egg and nut flour and fried sometimes. Nut flour is slightly advanced.
