Mimi has been toiling into the wee hours to ensure that this site is liberally packed with details that will enable you to a clearer understanding and better progress on The Specific Carbohydrate Diet (SCD) for ASD Mimi wrote the first version of the Pecanbread website several years ago. She had assembled a wealth of material, but was also busy with the high priority of establishing the autism version of SCD. Mimi was grateful when other volunteers helped redesign the site and apply the finishing touches. Still, Mimi never lost her desire to finish the project that she had started and to add new material to it. Our moderators and Carol F. have helped her to achieve her goal. The best of the former site has been retained. The website will remain a work in progress in order to accommodate new developments. Here are just a few of the topics: " Begin the Diet, " " Overcoming Difficulties " SCD and Other Diets, " " Addressing Yogurt Questions " and " New Precautions for Nuts and Nut Products. I'm certain many other folks have wonderful stories to report. I think if a new user was reading these reports, they might think this is an older diet and not as relevent due to the dates of the reports. Just a thought. Thanks again for all the hard work! Brownie points for all your hard work (SCD brownies of course). Just a quick comment/question or two. In " Parents' Reports, " it cuts out halfway through a story. I would enjoy reading the rest of what Jen Young has to say. Under " SCD and Fermented Foods, " you mention kefir and say that it's tricky. I'm an avid kefir maker and enjoy it daily. My hubby gave up kefir when he started SCD back in June 2006. I know he misses it. I know how to do the secondary ferment to remove most of the lactose, so I don't think it will be a problem for him when he's healed enough to try it. (Any suggestions as to what stage it falls into?) Why don't you consider putting a link beside the sentence or two talking about kefir. This link has Elaine's comments and describes how to ferment it further. If you scroll down the page you see a link for " Goat Dry Curd Cottage Cheese " http://www.whiteegretfarm.com/ . I clicked on this and the closest thing I found was " SKIM MILK COTTAGE CHEESE. " I know scdiet is not your website and you have no control over the links, but I was wondering if this is what they were talking about or if they have discontinued carrying the item.
