Guest guest Posted January 9, 2007 Report Share Posted January 9, 2007 we seem to be having a problem tolerating coconut oil. i've been using it for cooking banana-egg pancakes and fried eggs. we're only on day 3 and have followed the intro diet strictly so i don't see what else it could be. we're dairy-free due to issues with dairy in the past. we tried ghee a few weeks ago and saw reactions. i have a jar-full of bacon fat that i was using every day, before starting SCD, to cook everything. now i hesitate because the bacon has sugar in it. does anyone know of a good substitute for butter in the SCD dairy-free version, besides coconut oil? and out of curiosity, where does coconut oil fit into the chart? is it an advanced food? i prefer not to use vegetable oils for heat cooking. also, when are we allowed to use spices and vanilla? thanks! silvia 2 yr old with eczema, SCD day 3 Quote Link to comment Share on other sites More sharing options...

When I cooked with it, they threw up and felt very sick. When I switched to Emerald Lab Extra Virgin, certified organic Coconut oil that can be bought at GNC, they did very well with it. So, you have to be very careful about the type of coconut oil that you use. Guest guest Posted January 9, 2007 Report Share Posted January 9, 2007 It definitely could be that you're just experiencing die-off in general from having just started the diet three days ago. If you were eating quite a lot of coconut oil, you might get additional die-off just from the oil itself, because of it's anti-fungal, anti-bacterial properties. It could also be that it is just too early in healing to tolerate anything fried in oil. I know you weren't deep frying, but maybe even the pan frying of pancakes or eggs is just too hard on your guts right now. Patty, could I be right on that? Oil could be difficult to digest initially. I suppose what you could do is wait a few weeks or a month, then try again with a small amount like 1/2 to 1 tsp. Just enough to lightly coat the pan for cooking an egg is fine, but beginners should stick with cooking methods that don't involve frying in oil.... as much as possible. Guest guest Posted January 9, 2007 Report Share Posted January 9, 2007 Silvia, Your bananas just need to be well spotted all over with dark brown spots on the skins, with no green showing. The insides don't need to be brown spotted. Of course, the riper they are, the more digestible..... up to a point, though. Once bananas get REALLY black on the outside and totally mushy brown on the inside, they're almost starting to ferment. You don't have to go that far. Several moms on the list have reported improvement after pulling them from the diet. Guest guest Posted January 12, 2007 Report Share Posted January 12, 2007 One more thought about coconut oil, I have taken it and it caused loose stools and stomach pain. What I found out was that if I took too much of it that was when it happened. What I am saying is that taking only a small amount of it at a time works for me. Also, as I continue to take the oil my the amount my system can tolerate has gone up. I put a spoon of it in my tea and it gives me energy, keeps me full. I also like the thought of it being anti fungal.
