I've never made it, but my MIL says that it won't work well without cream and thickener (like flour)..... Thank you! Ellen 9 y/o dd scd since 5/06 for Crohn's btw, her endocsopy the other day showed INCREDIBLE improvement. Almost her entire colon was NORMAL! Dr. attributes this to SCD, and says that if her biopsy results are also normal, we can talk about her going off all meds and just using SCD! Re. the fondue, I forgot to say that another of my dd's has an anaphylactic allergy to nuts, so I'm hoping for a way to do this without nut flour. This is what I do for SCD cheese sauce: Whisk homemade mayo and yogurt (or dripped yogurt if I want it thicker) together until smooth. Heat these in a pot over low heat until you can see steam rise. Don't boil it. Add grated cheese and stir well to mix it all in. When melted I add a little cayenne pepper or paprika. I don't measure the amounts but go about fifty-fifty with the mayo and yogurt. I then add as much cheese as I want for whatever food it will be with. Without the cheese, it makes a great substitute white sauce which can have any of your favourite herbs and spices added.
