Pecanbread.com has an egg substitute area in the recipe section.

egg allergy

My son tested for allergy to eggs.

What can I use instead for all the baking etc.

He also tested allergic to sugar, soy, milk, gluten....funny huh?

I guess this diet might just be right for him, right now.

He likes the banana pancakes but without eggs, I 'm not sure how to proceed.

His new school is not allowing any nuts.

Page 98, of the BTVC has a nice muffin recipe that doesn't need eggs.

It works best if you use dripped yogurt or pears(I didn't try with

butter) and some banana for the eggs. I wouldn't use more than 3/4

of fruit and add the honey last as it turns out better if the batter

is thick.(You only need a bit of honey with all that fruit. 1/2 cup of

mashed banana would be plenty if you use the yogurt.

It doesn't make many muffins, they are small....a bit more baking soda

might help.(I think I might have added more bs-1/4tsp more?)

Ground pecans make this recipe yummy!!

Sorry one more thing...turn the oven down a bit and cook it longer as

they burn easy...the muffins did look a bit dark but they tasted fine.

He has a milk allergy too so I would have to skip the yogurt for now.
