What can I use instead for all the baking etc. He also tested allergic to sugar, soy, milk, gluten....funny huh? I guess this diet might just be right for him, right now. He likes the banana pancakes but without eggs, I 'm not sure how to proceed. His new school is not allowing any nuts. It works best if you use dripped yogurt or pears(I didn't try with butter) and some banana for the eggs. I wouldn't use more than 3/4 of fruit and add the honey last as it turns out better if the batter is thick.(You only need a bit of honey with all that fruit. 1/2 cup of mashed banana would be plenty if you use the yogurt. It doesn't make many muffins, they are small....a bit more baking soda might help.(I think I might have added more bs-1/4tsp more?) Ground pecans make this recipe yummy!! My daughter has a egg allergy too...I know it's no fun.
