Congratulations! I hope you enjoy Arizona. I have never been there

but I want to go see the Grand Canyon, spring training and play some

golf.

Your pancakes were delicious. They were too thick the first time,

with batter oozing out of the middle in the pan after one rotation

so I added more buttermilk the second time. Just perfect for me.

I had a doc appt today and I handed the receptionist some forms that

I had filled out. She looked them over and then said " would you like

your pancake recipe back " apparently your recipe had gotten mixed in

there.

Hi Beth,

Glad you liked the pancakes and found a way for it to work for you. Yes, I add

flax seed to chocolate

chip cookies; actually, I put a couple tablespoons in all cookie dough, even my

homemade biscotti,

which makes them nicely tender. It works great in No-Bake Cookies too (which

tastes just like fudge

mixed with oats). Funny thing... a year ago I was on a No-Bake cookie binge,

making a couple batches

each month. A full recipe has a stick of butter! After a couple months pigging

out on these cookies, I

went for a pre-employment physical. I thought for sure my cholesterol would be

sky-high after eating

pound of butter every month. But my total cholesterol was about 174, the LDL

(good cholesterol) was

out of range -- on the high side of good! And the HDL (bad cholesterol) was in

range, but on the low end!

So I guess despite all the butter and ice cream I was eating, I offset it

because the only other fats I

got were healthy fats from olive oil, flax seeds, salmon and tuna. Everything

else I eat is pretty much a

fruit or vegetable... except when I pig out on ice cream or homemade biscotti

and No-Bake cookies.

I'm looking forward to Arizona! I've always loved baseball (a huge Cubs fan!).

It really takes me back to the

days when my son played -- every summer from kindergarten through 7th grade. He

was so good, and took

it so seriously! Whatever he sets his mind to, he's such a perfectionist about

it. We have tickets to two

spring training games (Cubs vs Colorado on March 11 and Cubs vs San Diego on

March 14), and I'm just

so excited!

I've never played golf but the house I'm moving into opens up onto the 17th hole

of a golf course. D said

he'll teach me how to play but I think it's a guy-thing excuse just to get

close. :) I reminded him how bad I

was when he tried to teach me how to dance the two-step (if he wouldn't have

counted out loud I might have

done okay, but all that 1-2, 1-2-1 stuff confused me when it really should be

1-2-, 1-2-3! Hah!

I told him the chances of me having the patience to whack at a teeny ball hoping

to aim it toward a distant

hole is slim to none, but I'll happily tag along for the exercise since I love

to walk! I said I'd even play caddy to

him because it's all the more outdoor exercise. I reminded him I was used to

hefting 50-lb. sacks of feed on the

farm so I've got the arm muscles to hoist a golf bag. :)

Oh, and turns 25 on July 4. He's my fire cracker baby, complete with red

hair and green eyes.
