My friend has a lactose intolerant toddler and she wants to make SCD style yogurt using lactaid. The reason we let our yogurt ferment for a full 24 hours is because that gives the friendly bacteria time to eat up all of the lactose. SCD legal yogurt is lactose free. Lactaid is made from regular, lactose-containing milk, and an enzyme.
