Jody Goddard did the SCD cooking segment last year, and she is awesome. She

used to be an SCD counselor and moderator of the list. I'm sure it would be

well worth your time if you can attend.

Autism One

Do any of you guys go and present cooking at Autism One in Chicago?

They have a portion of the day dedicated to cooking SCD. Man I would

love to learn from you talented chefs!

Kristie and Meleah,

As part of the foursome that gave very well received SCD Cooking Demonstrations

in 2004

and 2005 in Toronto, let me say that SCD cooking is not something that needs to

be

regarded as awesome or intimidating.

Our main goal in our courses was to show that it didn't need to be elaborate

because the

ingredients were so pure. The fascination of SCD is its great versatility,

allowing one to

adapt, mimic and substitute thus creating dishes that often surpass those of

conventional

ones.

You CAN cook! Sure it's easier for those without special needs children or with

no children

at all but it's also very satisfying to be able to please ta family.

Check the recipes on the Pecanbread website and in BTVC ; note that the majority

are very

simple. Good European chefs don't use convenience foods. True, they use grain

but we

have suitable replacements.

When I attended my first SCD Potluck Luncheon, I thought the other people must

be

geniuses because their contributions were so delicious. In each case, the

recipes turned

out to be as simple as they were amazing. It was then that I let my imagination

take flight

and embarked on constantly reinventing and innovating my meals with our legal

foods as

the palette for seemingly endless creativity.

There are some creative cooks who have soared above and beyond simplicity, like

Marilyn

Alm, Jodi Bager and lass, among many others which just validates the

wonderful

scope of the SCD.

Yet, it was only a few months ago that I discovered what must be the simplest

SCD recipe,

Peanut Butter Brownies (or any nut butter) are among my all time favorites.

They have four

ingredients mixed in one bowl.

Again, you CAN cook as well as anyone!

s will speak on several dietary interventions for autism and Betsy

Hicks is

doing a cooking demonstration of both SCD and GFCF recipes.( Her husband is the

doctor

who described SCD as a low carb diet a few years ago. Possibly he had not

studied it in

detail at that time. I emailed him about it.)

We will be posting a comparison between the two diets in the near future.
