Dear Pam,

There used to be a few links to ready made foods in additon to what now exists

which are

three bakeries. In revising the website recently, we found some of the old links

either no

longer had suitable items or we could not validate the ingredients. The link to

a ham farm

showed two sugar cured hams and did not give sufficient details about the third.

Consult with a good butcher and you may be able to find one or arrange for a

local farmer

to prepare a sugar free ham for you.

You can order from field or House of Hams. Just make sure that they are

sugar free. Sometimes they are called salt cured, country hams, southern hams,

ect.

We ordered several hams and a bunch of bacon cured only with salt from a local

meat packing company. I say local, but it is about an hour's drive from

Portland, OR. I called around and if someone didn't offer it (some meat packers

specialize in say, just beef) then I asked if they knew of someone. I also

requested that the pig be pesticide, antibiotic, and hormone free. They were

able to get me a " clean " pig, were very careful and accomodating, but it took

about 3 weeks.

Hey Patti -

It is Mount Angel Meat, in Mount Angel. They were super nice and very

careful. I also use a farmer out of Molalla for all of my beef. You can get

1/4 cow for about $2.10 lb. for everything, and it is all organic. Let me know

if you are interested and I will send you his info.

field still makes a sugar free ham, but as far as I know, you have to call

to order it from them. I have yet to see it in the grocery stores.
