Turn your oven to lowest possible temp. Mine goes to 170F, but there are models that can go even lower. It takes few hours for the onion to dry out. Onion took much longer to get dry then garlic (like 7 -10 hrs). When the onion crisps up, cool and grind in coffee grinder. Store in a glass container with the lid in the fridge. Or use a dyhydrator. Monika <mysuit at optonline.net> Do the same for Garlic Powder Chili Powder 3 tsp powdered Ancho chiles 2 tsp oregano (crushed) 1 tsp ground cumin 3/4 tsp homemade garlic powder Place all ingredients in blender or food processor and blend until fully powdered. For Medium Heat Chili Powder, Add: 1 teaspoon cayenne pepper For Hot Chili Powder, Add: 1 teaspoon cayenne pepper and 1 teaspoon crushed red pepper Variations: Add: 2 teaspoons ground coriander seeds 3/4 tsp ground cloves Add: 1-2 teaspoons paprika BTW, I order my ancho chiles from http://www.penzeys.com. DO NOT trust their spice mixtures -- many of them have sugar in them, but the plain spices are okay. Wizop Marilyn L. Secure with >toothpicks or long sewn stitches. alternate trays in the oven periodically to assure even drying. Set oven control at its lowest setting, but not below 140-50°. If using an electric oven, wedge a potholder between oven and door to allow a 1 " opening. Moisture from the drying food will vent through this opening. Close the door on a gas oven, as vent will permit moisture to escape. Carol F.
