I cook it as the recipe says, than i let It cool for a bit. I carefully remove from the tin, put the wet side up on a piece of tin foil and put back in the oven for a bit.I sometimes add a little vanilla or cinanmon. I tried to make pancakes with just banana and chicken before but it didn't hold together well.
