Has anyone used raw goats milk or raw milk when making yougurt? I have a

closeby source for both and wondered if they will work / and if there are any

noticeable differences.

Fresh, raw goats milk (or cows milk), if you can find it, will probably give you

a superior yogurt. The taste can sort of vary, depending on what variety of

goats they are, and what they are being fed (sometimes varies depending on the

time of year). You will still have to heat it to 180 degrees F in the process of

making your yogurt, so it will essentially get pasteurized, but having only been

heated once, there's less chance for damage to delicate proteins in your end

result.

If you've ever made yogurt from the widely available Meyenberg milk that's most

often found in local grocery stores, you'll be pleasantly surprised at the

difference in taste, smell and texture (it will be thicker) when starting with

fresh, raw, local milk! My personal favorite when it comes to goat milk is that

which comes from Nubian goats... their milk is very rich and has a good flavor.

I have used both raw goat and cow milk and they work great. They both will

work. I was " allergic " to dairy but can have the raw milk yogurts.

Raw milk can be used but you must be scrupulous about thre source. Remeber it is

brought toi the simmer stage anyhow to kill bacteria in making yogurt.

Where I live, (in Ontario, Canada) it is illegal for farmers to sell raw milk to

the public as

there are serious health risks if it isn't pristine.

the difference that I have noticed is that it is much thinner yogurt then

regular milk that has been paseurized and homogenized already. Pearl
