Starting diet soon--have some questions...

I was diagnosed with Celiac Disease about 3.5 years ago. Though I

have improved on the gluten free diet, I still have a lot of gi

issues, chronic fatigue and other issues. I came across

the " Breaking the Vicious Cycle " book and am hoping the SCDiet is my

answer. In addition, my 23 month old son was recently diagnosed

with Celiac and he too seems to have trouble with all grains. I

have been researching the diet and trying to plan for it. I have a

few questions:

Can you have Polaner All-Fruit or any other jams/jellies?

Can you use canned tuna fish and if so, which brand?

How about canned white meat chicken?

Any Chicken broth that is legal? I found some at Whole Foods that

looks safe, but am not sure.

Which vitamins are safe? I know Freeda ones are, but any others? I

need a good multi-vitamin and pro-biotic (non-dairy).

What is the best substitute for dairy (mostly butter) in the

recipes? My son and I have a lot of trouble with dairy and I want

to avoid it for now.

Hope that isn't too many questions! Thanks so much for your help!!
