Recipe says SCD heavy cream

I was thinking of making the Key Lime Pie that's on scdrecipe.com for my DH's

birthday.

The recipe calls for one and a half cups of " SCD heavy cream. " I thought heavy

cream was

not allowed. (1 cup of yogurt is already part of the recipe, so I'm not sure

subbing with

yogurt would be very tasty).

Any suggestions or comments?

You make SCD yogurt with the heavy cream. It doesn't taste the same as

regular yogurt. Not as tart (as least I don't think so). You need to

make sure you read the ingredient list on the heavy cream. Most

regular store bought cream has illegals in it. You may have to buy

organic (even then, remember to watch your labels).

I made this once. It is yogurt, but yogurt made with half and half. It's made

the same way, fermented 24 hours or a little more. I also remember draining off

as much of the whey as possible. It is the whey that give it that yogurt taste

(sour). It's very good.
