Only used one packet of starter w/ Yogourmet yogurt maker... throw out results?

By neglecting to read the small print, I only used one packet of

Yogourmet yogurt starter per half gallon of milk instead of two

packets. The resulting yogurt appears to be of the proper

consistency... I cooked it for 24 hours... is it SCD legal? Or do I

need to throw it out?

I guess there is just no way for us to know if all the lactose got properly

digested by the bacteria. So, in good conscience, I must advise you to toss it

this time. Sorry.
