I got a note home from my son's school today saying no nuts at school at all. There goes my pancakes made with almond flour, spread with nut butter, muffins and cookies made with almond flour, little containers of mixed nuts, chicken nuggets with almond flour crumbs. I have to send him a lunch and 2 snacks (am and pm) everyday. Any ideas??? I've tried the chicken muffins, a couple of times, and I can't make them work. Help. Thanks. Amber. You can make them with any homemade mayo; I use the one in BTVC. Guest guest Posted February 8, 2007 Report Share Posted February 8, 2007 Amber, Can your son have eggs. Have you tried the nut-free/dairy-free bread recipe in the files. It is easy to make if you have a stand up mixer. It works well for a chicken salad sandwich..just like a wrap...you could just put jam on it too. I made one change to the recipe...I cook it on a vinyl cooking sheet for a while before i put it on the parchment paper...as it was sticking badly to the parchment paper... If your chicken muffins aren't holding together...use less fruit and/or a little less egg...make sure the batter is thick. I make them without eggs too. It can be made without any nut flour, Use as a wrap for egg or salmon sakad ..A thick yogurt dip and some roasted veggie pieces, a bit messy, but tasty Honey garlic chicken wings fruit leather homemade beef jerky gelatin candies Mushroom " peanuts " (just spray sliced mushrooms with oil and bake on parchment paper until crisp) Devilled eggs Appkle chips (make in low oven or dehydrator) Digestive Wellness sells them too.
