I don't know if you can find goat butter.... and I honestly have not personally ever made it. I'm sure someone here has the instructions, though you can also purchase ghee.... perhaps goat ghee, as well as cow ghee, in specialty markets. I don't know of anywhere to buy goat GHEE.... but if you can get the butter, you can easily make it into ghee. It's just the way it is in the goat dairy industry. I can't guarantee that it is organic, of course, but I wouldn't be concerned about it. Just my opinion based on what I've been told by someone that I trust. You just melt the butter, and then continue to leave it on the burner (low heat) for a few more minutes. The proteins will separate from the fat, and the additional heating causes the proteins to coagulate and clump at the bottom of the pan. Then you pour off the fat leaving the proteins behind.
