Could someone please explain why chestnut flour is illegal, but

chestnuts are ok on the scdiet? Has anyone found after being on scd

for a few years that they can tolerate certain illegals?

It's the same reason soaked designated types of beans are allowed in advanced

stages, but

bean flour is not. The commercial processing can result in unwanted,

indigestible starch.

A bit off the path: I cannot use Bob's Red Mill Almond Flour. It gave me a

reaction. When I

contacted the company they admitted they process the nuts on machinery used for

rice

and grain. They clean the machinery and toss the first 50 pounds of almond

flour, but that

didn't seem to be understood by my tummy and I always react badly to the product

and

use another brand. celiacs seem more sensitive to timy amounts of starch than

sugar, at

least that has been my personal experience.
